Description
This zucchini bread is very moist & flavorful, the perfect way to use up your abundance of zucchini from your summer garden!
Ingredients

- 3 eggs
- 1 cup oil
- 2 cups sugar
- 2 cups grated zucchini
- 3 tsp vanilla
- 3 cups flour
- 1 tsp salt
- 1 tsp baking soda
- 1/4 tsp baking powder
- 3 tsp cinnamon
- 1/2 cup chopped nuts (optional)
Instructions
- Preheat oven to 350 degrees.
- Beat eggs until foamy in bowl.
- Add in sugar, zucchini and vanilla and mix lightly but well.
- Next add in flour, salt, baking soda, baking powder, and cinnamon, mixing it all together.
- Fold in chopped nuts by spoon.
- Grease two loaf pans.
- Pour mixture into two loaf pans.
- Bake for 1 hour at 350 degrees or until toothpick comes out clean.
- This will make 2 loaves of zucchini bread.
