White Chicken Chili – A Hearty Slow Cooker Meal for Busy Evenings!

White Chicken Chili
I am loving this beautiful fall weather we have been having, a few days of rain here & there, mixed in with the beautiful sunshine but cooler, clear nights. This is the type of weather that gets me in the mood for warm, snuggly blankets, hot apple cider and a hearty, filling chili or soup recipe to warm us up in the evenings. Fall is also a super busy time for many of us and we’re just trying to keep up with the busy after school schedule for kiddos. So, I am all about finding simple recipes and using my slow cooker as much as possible -anything to help me spend as little time as possible in the kitchen when I have a to-do list a mile long. I also look for shortcuts in the kitchen which will help us achieve the maximum flavor without all the time & energy.
I love this White Chicken Chili recipe I got from my friend Melissa years ago as it’s a variation of your more typical White Chicken Chili recipes, in that it’s not a creamy version, but it’s lighter and healthier, using a fresh salsa as the main base with the chicken, chicken broth and the fresh cilantro giving it that extra boost of flavor.
I love making a White Chili recipe as it uses the Great Northern beans, which is nice to change it up from other soup & chili recipes that we make frequently during the fall & winter. I have always used the Great Northern Beans, but recently I was at Walmart and found these White Chili beans & knew this was something I needed to try. The White Chili Beans are Great Northern Beans but they have a mild chili sauce that the beans have slowly been simmered in. This is perfect for this White Chicken Chili recipe as it gives an extra boost of flavor without having to go to the work of chopping up extra ingredients, etc.
Beans are such a great source of protein to fill you up, which I love to use in the fall as we’re so busy & on the go and we need that extra boost of protein and fiber for energy for these busy evenings. They can also really stretch your budget as you can make a big pot of this chili and just use a few chicken breasts or one rotisserie chicken but it will stretch over several meals. Beans are so hearty & filling that you don’t need as much meat in these chili’s & soups which can make your meat go farther, which we try to do at least a few times a week, to add more beans to make that meat stretch further to lower our meat budget. I love trying out the Chili beans from Bush’s Beans, to give that added boost of flavor to our favorite chili’s and soups. It’s nice to have some new options to change up our recipes a bit and give us some different flavors. That’s the unique thing about this White Chicken Chili recipe is that it really can taste different each time if you’d like, just by switching up the type of salsa you use as well as adding Chili Beans versus regular white beans, just for some slightly different flavor options.
White Chicken Chili:
Ingredients:
- 4 cups of cooked chicken (shredded or diced) – about 3-4 boneless skinless chicken breasts or I use a rotisserie whole chicken as it works well to use both white & dark meat for extra flavor
- 2 containers (16 oz) of fresh salsa (I use mild salsa but use what you prefer)
- 2 tbsp garlic, chopped
- 2 cans (4 oz) fire roasted diced Chili’s (I use mild, but use what you prefer)
- 32 oz carton of chicken broth
- 1 onion, chopped
- Cilantro, small bunch, chopped
- 3 cans of Beans – Great Northern Beans or White Chili Beans (we use Bush’s White Chili Beans for a little added kick with the Great Northern Beans & chili sauce)
- 3 tbsp olive oil (or butter if you prefer for sauteing)
Garnish:
- Shredded Cheese
- Chopped avocado
- Sour Cream
- Lime juice from fresh lime
- Jalapeno slices
- Tortilla Chips
Directions:
Saute the chopped onion and garlic on the stove with 3 tbsp of olive oil. Continue for several minutes until the onion is more of a translucent color.
While the garlic & onion is cooking, cut up your chicken. I prefer to use a rotisserie chicken as it’s a big time-saver when you are getting this meal ready to cook. Plus, it’s nice to have the combination of white & dark meat for the different flavors.
Add chicken, chicken broth, fresh salsa, diced chile’s, white beans and the garlic/onion mixture to the slow cooker.
Cook on low heat for 2 hours.
Add chopped cilantro to your crockpot mixture.
Simmer for another 20 minutes.
Serve hot with shredded cheese, sour cream, lime juice, avocado slices and tortilla chips.
