Tuesday "Recipe Swap" – Apricot Chicken or Pork Chops

I’m a little late in the day posting this, but I wanted to still get this up today. It’s time to share our favorite recipes with each other! We had a great response last week and had all sorts of wonderful recipes shared….everything from homemade pesto, chili recipes, snack mix, salads, & more. Check out all of those ideas

I’ve decided to share another one of our favorite slow cooker recipes – this is a versatile recipe which you could use with pork chops or chicken. And you can cook it in the oven or in the crockpot! This is a very economical meal as you can often find the salad dressing free or super cheap, and I’ve been able to find pork chops marked at a great price frequently as well.

Apricot Chicken or Pork Chops

Ingredients:
6 skinless, boneless chicken breast halves (or 4-6 boneless pork chops)
1 1/2 (1 oz) packages dry onion mix
1 (10 fluid oz) bottle of Russian salad dressing
1 cup apricot preserves


Directions for Crockpot:
-Put the chicken or pork chops in. Mix all other ingredients together and cook on low for 4-6 hours on low (possibly might need less time such as 3-4 hours, depends on your crockpot).
-Meat will be falling off due to tenderness when it’s ready.
-Serve over rice

Directions for Oven:
-Preheat oven to 350 degrees
-Place the chicken pieces in a 4 qt casserole dish. Mix the soup mix, dressing and jam together and pour over the chicken.
-Cover dish and bake for 1 hour.
-Serve over rice

  1. I might have to try this next week! I have just recently discovered the wonder that is my slow cooker, up until a month or so ago I had only ever used it for spaghetti sauce!

  2. Oh, I love the slow cooker-thank goodness since I'm not a very good cook!

    I've found Russian Dressing at Safeway–even my small-town store amazingly. But, it just depends. You could use Italian if you can't find it-I've used that before and it was okay.
