Taco Bean Soup -Easy Dinner Using your Slow Cooker + Freezer Friendly Meal too!

Ingredients

  • 1 lb ground beef – browned
  • Dried onions – 3 tbsp (Fresh onion would be even more tasty but this is what I had on hand)
  • 3 cans of assorted beans (black beans, kidney beans, pinto beans, etc)
  • 1 can stewed tomatoes
  • 1 can creamed corn
  • 1 can whole kernel corn
  • 1 pkg taco seasoning (or make your own taco seasoning)


Instructions

  1. Brown your ground beef or ground turkey.
  2. Add all ingredients in a crockpot (I put most of these in undrained to add more of the “soupy-ness” except the beans)
  3. Cook on high for 5 hours (or you could put it on low for 8-10 hrs). Or you can put in a soup pot and simmer for 2 hours on the stove.
  4. Serve in a bowl with taco chips, shredded cheese, sliced olives, grated cheese, chopped tomatoes, sour cream-anything you like with tacos!
