Taco Soup -Easy Dinner Using your Slow Cooker + Freezer Friendly Meal too!

Taco Soup for your Slow Cooker
Taco Soup is one of families favorites, and its a very economical soup to make. I often make it after I have made tacos, using the leftover meat from that dinner. I love simple, easy meals in the crockpot & this is one of the easiest meals but it tastes delicious! Great for those cold evenings! This is a recipe from one of my Mentor Moms from MOPS – she brought me this meal right after my younger daughter was born and it’s been a favorite in our family ever since she introduced us to the recipe.
Taco Bean Soup
- 1 lb ground beef – browned
- Dried onions – 3 tbsp (Fresh onion would be even more tasty but this is what I had on hand)
- 3 cans of assorted beans (black beans, kidney beans, pinto beans, etc)
- 1 can stewed tomatoes
- 1 can creamed corn
- 1 can whole kernel corn
- 1 pkg taco seasoning (or make your own taco seasoning)
- Brown your ground beef or ground turkey.
- Add all ingredients in a crockpot (I put most of these in undrained to add more of the “soupy-ness”)
- Cook on high for 5 hours (or you could put it on low for 8-10 hrs). Or you can put in a soup pot and simmer for 2 hours on the stove.
- Serve in a bowl with taco chips, shredded cheese, sliced olives, grated cheese, chopped tomatoes, sour cream-anything you like with tacos!

If you don’t have a slow cooker yet, here are two that we recommend:
Crockpot 7 Quart Stainless Steel Manual Slow Cooker – this is a good basic crockpot which is a nice, big size for big meals like this Taco Bean soup. This is similar to the Crock-pot I used to have and it worked well for our family of 4.
Crockpot 6 Quart Programmable Cook & Carry Slow Cooker – This is a crockpot that we just got this summer and I am loving that not only is it programmable & you can set the exact time you want it to cook. But it is also a cook & carry slow cooker, which means that it is easy to bring to gatherings with the clamps on the lid, so that it won’t make a mess in your car- this is a great bonus for me & when we get together with other families for meals.

Got one even easier! Yes, brown your beef or turkey, then add taco seasoning. Put in a stoneware container and add one can beans, drained (I use black), one can diced tomatoes with juice (I use the ones with green chiles), one can corn (with juice, not creamed). Microwave covered for 20 minutes and serve with chips, cheese, sour cream. Yummy! Of course if you want more for your parties, double it! I use my Celebrating Home Bean Pot too cuz’ I KNOW it’s microwave safe.
