Spicy Teriyaki Chicken Nachos (Yum)! (Great Way To Use Leftovers)

Leftover Chicken Recipe – Spicy Teriyaki Chicken Nachos (Yum)!

One way I love to save money on food, is to come up with new recipes we can make with leftover food. We have been working on making more then one meal out of items we cook lately, and I am loving it. Not only does it help us save on money, but it also makes cooking a lot easier for me. We had teriyaki chicken the other night, and I wanted to come up with a recipe for the next night that would be completely different. These Spicy Teriyaki Chicken Nachos were a big hit with my family, and I loved them! If you are looking for some ideas on how to use that leftover Teriyaki chicken, give these a try.
I adapted this recipe from one I found for Asian Nachos, with ingredients I had on hand. The sweetness of the teriyaki was too much for us, without the balance of the hot sauce, feta cheese and cilantro, so those ingredients where important to balancing all the flavors in these nachos for us. My husband was a bit skeptical about this recipe, but once we added those ingredients he could not stop eating them! We used Tapatio, but Buffalo Sauce or Sirachi Sauce would be great too! I love the flavor of feta cheese with hot sauce (to cool it off) but you could skip this if your not a fan, or also try blue cheese if you prefer that cheese.
Ingredients:
- 1/2 Bag of Tortilla chips
- 1 (12) oz bag of Mexican Cheese Mix, Shredded (you could really use just about any cheese you prefer to put on nachos here)
- Leftover Teriyaki Chicken, Shredded (1 to 2 breasts)
- 1/3 C. of Feta Cheese
- Chopped Cilantro, to taste
- Hot Sauce (your favorite) (approximately 1 tablespoon, or to taste)
This recipe is so simple, start by preheating your oven to 350 (or you can broil them, but watch closely if you do this so you do not burn your chips or cheese).
Next spread your your tortilla chips out in a deep dish pan.
Top with the shredded chicken and bake until the cheese is melted and bubbly (approximately 5 minutes).
If you are making your teriyaki chicken from scratch (verses using leftovers from a previous meal), you can use this 3 ingredient teriyaki chicken recipe here. This is also a great recipe to make, and double it up, and freeze half of the chicken to make these Spicy Nachos another night in the week. The chicken freezes well, and you can then thaw it out and warm it up in the microwave or over the stove to use in this recipe (if you have not done freezer cooking before, we have some tips on that here).
I like to add the chicken before I cook the cheese, so it melts in with the cheese. I have found the best way to do this is the warm the chicken first (as the cheese cooks too fast to warm it enough), and then add it to top of cheese before melting cheese. You could also add it after you have melted the cheese.
Remove from oven and sprinkle with the Cilantro, and Feta Cheeses.
Lastly, top off with a few splashes of Hot Sauce (I like to do this once the nachos are on a plate, that way I can add as much hot sauce as each individual likes, based on their spice preference).
Enjoy your meal! Best part is that it does not require too much prep, or clean up. That makes the nachos taste even better to me.
