Smores Crumbl Cookies – Copycat Crumbl Cookie Recipe

Have you tried any Crumbl Cookie Copycat recipes yet? Oh my – my daughter made a Key Lime Pie copycat crumbl cookie recipe last spring & it was so good, so I was excited to try a recipe for one of my favorite things – Smore crumbl cookies! Yum! These are a great way to extend summertime by making your own version of s’mores at home in cookie form!

Smore Crumbl Cookie with Ingredients

You probably have all of these ingredients on hand for the smore crumbl cookie, so it will be easy to throw these together. You’ll use browned butter, chocolate chips & marshmallows along with your standard ingredients to bring this all together into a gooey, delicious cookie treat.  Drizzle that melted chocolate over the cookie & marshmallow for the final addition to complete this yummy cookie!

These are sure to be a hit at parties or with kids thanks to the yummy marshmallow & chocolate on top!

Crumbl Cookies – Smores Recipe

Ingredients:

Smore Crumbl Cookies Ingredients

Ingredients for Cookies:

  • 1 cup salted butter
  • 3/4 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 1/3 cups all purpose flour
  • 2 tsp vanilla extract
  • 4 sheets graham crackers
  • 3/4 teaspoon baking soda
  • 1 cup mini chocolate chips
  • 8 large marshmallows (cut in half)

Ingredients for Chocolate Drizzle:

  • 2 tablespoons mini chocolate chips 
  • 1 tablespoon  salted butter
  • 1/2 teaspoon vanilla

Ingredients for Graham Crumble:

  • 2 graham crackers
  • 2 teaspoon salted butter

Directions:

Brown the Butter:

Browning butter for smores crumbl cookie

  • Melt the butter slowly on medium heat in a saucepan. Once melted, turn the heat up a bit and watch the butter closely while continuing to stir.
    The butter will bubble and start to  pop as the water is evaporating out. Once this slows down watch extremely closely  as the next step will be the browning .
  • Once the solids are starting to roast, you’ll start to see small bits of brown forming in the pan. stir the spoon around the pan a few times more and remove it quickly from the heat. The butter should have swirls of browned bits in the bottom of the pan and is now ready

*These steps happen very close together. Please watch closely so your butter does not burn!*

Making the Graham Cracker Cookies:
  • Pour the browned butter (all of it) into a large bowl and let it sit to cook for 10-15 minutes***While waiting: Line a baking sheet with parchment paper and set the oven to 350°F. Place graham crackers in a zip top bag and crush with a rolling pin until they are fine crumbs***

Mixed ingredients for Graham Cracker Cookies

  • Add the brown sugar and granulated sugar to the cooled butter mixture and use a spoon to stir well until fully combined (3 minutes).
  • Mix in the egg and vanilla extract until  well combined.

  • Add the flour, graham cracker crumbs, baking soda to the butter mixture and mix well.

  • Add in the mini milk chocolate chips and mix to the batter

  • Use a 1/4 measuring cup to measure out 8 cookies  round each batter into a cookie ball and place on a baking tray and bake for 10 minutes until cookies are set

Adding marshmallows to smores crumbl cookies

  • Immediately remove the cookies from the oven, press two marshmallow halves into the top of each cookie overlapping them a little bit.
  • Turn the oven on to the broiler setting to high
  • Broil cookies, watching  closely, for about 2 minutes or until marshmallows are lightly golden. 
  • After browning marshmallows, allow cookies to cool for 10-15 minutes before adding the  chocolate drizzle and graham cracker crumbles to the top
Adding Chocolate Drizzle & Graham Cracker Crumbles:
  • Melt 1 tablespoon of butter in the microwave until fully melted, Stir in 2 tablespoons of milk chocolate chips until totally melted with vanilla 
  • Melt 2 teaspoons of butter and mix in two finely ground graham crackers, mix well.
  • Drizzle the chocolate over the still-warm cookies with a spoon and sprinkle the buttered graham crackers crumble over each cookie. 
Serving Size: Makes 8-10 cookies

    1. Since everyone’s ovens are different, the cooking time might vary slightly, so they shouldn’t be too gooey, so I would add a little more time
