Simple and affordable stir fry recipe, using ramen noodles!
Ingredients
Sauce –
1 tablespoon rice wine vinegar
1 tablespoon toasted sesame oil
2 tablespoons soy sauce
2 teaspoons hoisin sauce
1 teaspoon brown sugar
1 teaspoon minced garlic
1 teaspoon minced ginger
Stir Fry –
2 packages of ramen noodles, discard seasoning packet
1 tablespoon peanut oil
1 teaspoon minced garlic
1 teaspoon minced ginger
4 oz shiitake mushrooms, stems removed, sliced
1 small head of broccoli, florets only
½ red bell pepper, sliced thin
1 egg, lightly beaten
2 green onions, sliced
Chopped cilantro for garnish, optional
Sesame seeds for garnish, optional
Instructions
In a small bowl whisk sauce ingredients together and set aside
Cook the ramen noodles per package directions, drain, set aside
In a large skillet heat oil over medium high heat then stir fry garlic, ginger, mushrooms, broccoli, and red bell pepper for about 2 minutes
Stir in the beaten egg
Add the cooked noodles and sauce and toss to fully incorporate
Plate, garnish with sesame seeds and cilantro, serve, and enjoy!
