This Egg Drop Ramen Soup recipe is simple, delicious and affordable to make. It is also the perfect comfort food when you are looking for something warm and full of flavor.
Ingredients
3 packages of ramen noodles, not using flavor packets
½ teaspoon salt
1 teaspoon garlic powder
10 ½ cup chicken broth
1 small piece of fresh ginger, peeled
1 tablespoon soy sauce
3 carrots, peeled and sliced into rounds
1 tablespoon sesame oil
3 eggs
6 green onions, sliced at an angle, including some greens
Sesame seeds for garnish, optional
Instructions
Cook ramen noodles in salted water, drain, set aside
In a large pot over medium high heat, bring the broth, ginger, and soy sauce to a simmer
Add in the carrots and green onion (save 2-3 tablespoons for garnish) and cook until tender
Remove the ginger from the broth
In a bowl whisk together the eggs, sesame oil, salt, and garlic powder
Stir the broth then pour the egg mixture into the pot letting them sit undisturbed for about 60 seconds until cooked
Use a spoon to break up the eggs
Add the cooked ramen to the pot and cook for a minute or so until hot
Serve, garnish with green onion and sesame seeds if desired and enjoy!
