Easy Mexican Bean Dip Recipe – 5 Minutes to Prep & So Delicious!
If you are looking for a great refried bean dip recipe, this easy to make Mexican Bean Dip recipe is not only super delicious, but it only takes 5 minutes to prep (and then some cook time). I love when I can throw a dish like this together with very little prep work, and it is perfect for entertaining or just because you are craving it.
I love to use this dip recipe for entertaining (and put it out with things like pico de gallo, and guacamole and a big bowl of tortilla chips). I will also use it to put out a kind of “self serve nacho bar” for my kids some nights when I don’t want to have to work too hard. I put the dip and toppings out, and let them layer their own tortilla chips with what they want on them. Once you start making this recipe, you will crave it regularly!
Ingredients for this refried bean dip recipe:
- 1 (8 oz) package cream cheese, softened
- 1 cup sour cream
- 1 can (16 oz) refried beans or 2 cups homemade refried beans
- 2 tablespoons taco seasoning
- 1 clove garlic, minced
- 3 cups shredded cheddar cheese or Mexican cheese, divided
Toppings and Serving Ideas To Put Out For Everyone To Add What They Want:
- Pico de gallo – This can be served next to it or on top of it!
- Jalapeno, chopped
- Cilantro (or I prefer this Cilantro, onion and lime mix)
- Tomatoes
- Salsa
- Black Olives
- Tortilla chips
- Green Onions
How To Make This Mexican Bean Dip:
The main ingredient for this dip is refried beans. You can use canned refried beans, or make your own. They are so simple to make, that I make my own, but either will work. Of course, if you make your own the same day you are putting the dip together that will add some additional time to the recipe. If you want to make your own, you can put 2 cans of pinto beans (un-drained) and a 1/4 teaspoon of seasoning salt into a pot. Bring to a boil, and then turn to medium low and let them cook until half the liquid is boiled out, and beans are tender. Use a masher to mash together to the consistency you like (if they are too thick, add a little bit of water, if too thin, then cook down a little bit longer). Set aside your your can of refried beans, or 2 cups of homemade refried beans.
Mix your cream cheese in a bowl until it is smooth and creamy.
Mix in the sour cream next.
Add in the beans, seasonings and cheese.
Stir with a spatula until well blended together.
Transfer to a baking dish, and bake until heated through.
Then remove from the oven and add shredded cheese to the top, and return to the over for another 3-5 minutes, or just until cheese is melted and bubbly.
Once you have baked the dip, put it out with all the toppings you want and some tortillas, and dig in!
