Corn and Black Bean Salsa
We love to have get-together over the summer, whether it be for a BBQ out on the deck & playing summer games in the yard or a night-time get-together with board games & appetizers to munch on. I love to use ingredients from our garden or the farmer’s markets or produce stands, too, to take full advantage of all this delicious produce we have available in the summertime. This Corn and Black Bean salsa is a great dip option, perfect any time of year, but especially good during the summer as it is light & flavorful and a great option for outdoor get-togethers as it doesn’t spoil fast so you can keep it outside with a bowl of tortilla chips while you play games or visit with friends.
Appetizers that are delicious to munch on yet filling are key for us and we love to find ones that are more healthy, without the heaviness (& calories) that comes from popular party dips. Plus, a big bonus that it can work well for get-togethers for those who have food allergies or food sensitivities, (since it’s vegan, gluten-free and dairy-free).
I love that this Corn and Black Bean salsa has all the flavor of a good salsa, but still is quite filling with the addition of the Bush’s Best black beans. The black beans provide a good boost of protein, to keep you fuller longer and they provide a source of fiber as well, which makes this very healthy with the produce & the beans. Beans are such a frugal option to use for parties, too, as you often need to make larger quantities of your recipe to serve at parties or potlucks and beans are so inexpensive so they won’t break your budget for the party, even when you may have to double or triple the recipe for your get-together.
Walmart is a great place to head for Bush’s Best beans as they have a wide variety of beans, everything from Great Northern Beans to Garbanzo beans to Black beans and the price is consistently low at Walmart.
What I love about this Corn and Black Bean salsa is that it works well not just as an appetizer either for chips, but you can also use as a topping for grilled chicken, fish and much more. Grill up some chicken or fish, like salmon, on the grill and add this as a topping for a summery, flavorful twist to your typical fish or chicken dish. I love easy ideas like this to put a new twist on your typical grilled chicken recipe!
Corn and Black Bean Salsa
Ingredients:
A few of the ingredients in the Corn & Black Bean Salsa
Salsa:
- 15 oz can sweet white cut corn
- 15 oz can Bush’s Best black beans, drained
- 1 large ripe avocado, diced, plus extra slices for garnish
- 2 Roma tomatoes, diced
- 3/4 cup chopped green onions
- 1/2 cup chopped fresh cilantro
Dressing:
- 1/4 cup extra virgin olive oil
- 1 tsp ground cumin
- 2 garlic cloves, crushed
- 1 tsp lime juice
- salt & pepper to taste
Directions:
In a bowl, combine corn, beans, diced avocado, tomatoes, green onions, and cilantro to make your salsa.
Cover and chill for 1 hour.
For Dressing:
Combine all ingredients and whisk to blend.
Stir into the salsa mixture after the salsa has chilled.
Garnish the salsa with avocado slices
Serve with tortilla chips
