Chocolate Peppermint Cookies Recipe

If you are making Christmas cookies, this chocolate peppermint cookies recipe is one you will want to add to your list. They are really fun to make with kids and put out for Santa on Christmas Eve, as they are so festive-looking. They pair perfectly with a nice cold or warm glass of milk.

The other thing that is fun about this recipe is that you can decide what kind of chocolate you want to use. You can use milk chocolate, semi-sweet, or dark chocolate. You can even use white chocolate if you want that contrast of the light and the dark. my favorite is milk chocolate personally, but any of these will work well with this recipe.

Ingredients:

To make this recipe there are two sets of ingredients. One for the cookies themselves, and then one for the toppings to add to them.

To Make The Dough:

1 cup + 2 tbsp of flour
1/3 cup of cocoa
2 1/3 tsp of cornstarch
1 1/4 tsp of baking powder
1/2 tsp of salt
12 tbsp of butter
1 cup+1 tbsp of brown sugar
6 tbsp of sugar
1 egg
1/2 tsp of mint extract
1 1/2 tsp of vanilla
3/4 cup of chocolate chips

For the Topping:

6 oz. of chocolate chips (or you can use chocolate melting candies too.
½ tsp canola oil
2-3 candy canes (crushed)

How to make these chocolate peppermint cookies:

There are basically two steps to these cookies. You will make the chocolate peppermint cookies, then you will make the chocolate peppermint toppings to add to the cookies to take them to that next level. Here is how to do both those things.


1. Prepare all the ingredients.
2. Mix all of the dry ingredients in the big bowl.


3. Add the butter in the other small bowl and after that add the sugar, egg, vanilla, and mint extract.


4. Combine the dry and the wet mixtures, and mix well.


5. Add the chocolate chips and stir. Chill the dough in the fridge for about 1 hour.
6. Once the dough is chilled enough to easily hand, form your cookies and put them on a parchment-lined (or sprayed) cookie sheet. Bake at 350 degrees for 9-12 minutes.
7. Melt the drops. Dip half of the cookies in chocolate, after than sprinkle cookies with crushed candies.
