Cheesecake Stuffed Strawberries – Quick & Easy Dessert
One of the things I love about summertime are all the delicious, fresh produce from our local areas & local berries are my favorite! I am all about buying flats of local strawberries to enjoy every moment of those delicious berries, so we love to find new ways to use strawberries to bring out their best flavor!

These Cheesecake Stuffed Strawberries (also called No Bake Strawberry Cheesecake bites) are a fun way to spruce up your strawberries with a cheesecake mixture to make them a yummy dessert for your family or to bring to a gathering or party. You probably have all of these ingredients in your fridge or pantry if you are like me – we almost always have strawberries on hand as we eat them all week & then the other ingredients are staples most of you would have on hand. So they are so easy to whip up & fancy up your strawberries for a special treat!
Just make sure to serve these on the same day you make them – since you’re using fresh berries, the strawberries will get mushy if you wait till the next day, so you want to serve them the same day for best freshness.
Cheesecake Stuffed Strawberries:
Ingredients:
- 3 cups of regular-sized strawberries
- 3/4 cup of cream cheese, softened
- 3/4 cup of powdered sugar
- 1/2 cup of graham crackers
Directions:
Rinse your strawberries first. Cut the tops off your strawberries & hollow out the center of the berries using a pairing knife.
Add cream cheese and powdered sugar in a bowl . Mix it together well with an electric mixer.
Use a spoon to stuff strawberries with this cream cheese filling. {You could also use a piping bag if you want it to be very concise}
Ground the graham crackers into small crumbs by putting the graham crackers into a ziploc bag & roll a rolling pin over them

Sprinkle crumbs to the top of the filled strawberries. {Or you could dip them into the crushed graham crackers too, but I don’t like to take any chance of my filling falling out}
