  • 2 cups flour
  • 1 cup sugar
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 teaspoon lemon zest
  • 1/2 cup butter
  • 1 cup buttermilk
  • 2 eggs
  • 1 teaspoon vanilla
  • 2 cups blueberries


Instructions

  1. Preheat the oven to 375 degrees and grease a 9×13 baking pan.
  2. In a large bowl, whisk together the dry ingredients.
  3. Cut in the butter with a pastry blender or fork.
  4. Add in the milk, eggs and vanilla and mix well.
  5. Gently fold the blueberries into the mixture – don’t over mix.
  6. Pour the batter into the prepared pan and bake for 35 minutes until golden brown on top.
  7. Cool for 20 minutes and then it’s ready to serve.
