One of the most requested meals by our girls and my husband are these Barbecue Beef Cups. These are a crowd favorite because of the sweet & tangy sauce paired with the ground beef, cheese & biscuits. Anytime we serve these for kids, they rave about them and best of all, they are so simple & easy to make. They take just minutes to prepare and you can make double batches of this to feed a crowd or have plenty of leftovers for lunches. Barbecue Beef Cups:
Ingredients:
1 lb ground beef
1/2 c onion, chopped
1/2 tsp salt
2 tbsp vinegar
1 cup ketchup
1/2 cup brown sugar
1/2 tsp dry mustard
1 can biscuits (10 biscuits)
Grated cheddar cheese
Directions:
Preheat oven to 350 degrees.
Brown ground beef & add onion in pan.
Add ketchup, brown sugar, vinegar, salt, and mustard
Simmer 5 minutes
Roll out biscuits into large circles (or just use your hands to spread out the dough) and press into muffin tins
Fill with meat filling
Top with grated cheese – as much as you desire per cup
Bake at 350 for 8-10 minutes
