Bacon Egg Cups
I love having eggs for protein in the morning, but it can be time consuming for those mornings when you need to be on the go. So these Bacon Egg Cups are the perfect quick, grab & go breakfast idea! They are full of protein & veggies and a healthy start to your day!
Plus, I love making baked egg recipes as they can be made ahead and you can even freeze these ahead of time (flash freeze them so you freeze them individually first before putting them in a ziploc bag together). So that makes them quite a time-saver if you make these ahead of time & then pull them out & warm them up in the morning before you’re off to work or school! If you need recipes that use a lot of eggs (maybe after Easter), this is a great option to make a pan or two & then freeze the extras for later.
I love the Costco egg bites because they are so yummy & fast to grab in the mornings, but they can be pricey & it’s so much more cost-effective to make these mini egg bites on your own! I also love that you can customize them & put in whatever ingredients you want – you can choose turkey bacon or sausage, change up the veggies to your favorites or whatever you have on hand to use up! The options are endless & that’s why these egg dishes are my favorite! If you’d rather not bake them, you can also make these as air fryer egg bites too for a faster option
