Description
This Avocado Tomato Recipe is a perfect side dish in the summer and is especially nice if you grow your own tomatoes. I love the refreshing taste of the ingredients, and it is a healthy option to add to your menu too.
Ingredients

- 1 lb tomatoes
- 1 cucumber
- 1/2 medium red onion diced
- 2 avocados diced
- 1 Tbsp extra virgin olive oil or sunflower oil
- 1 Tbsp fresh lime juice (from 1 medium lime)
- 1 Tbsp lime cilantro dressing
- 1/4 cup (1/2 bunch cilantro, diced up)
- 1 tsp sea salt
- 1/2 tsp cracked black pepper
- Feta Cheese (Optional)
Instructions
Dice up all the vegetables into bite size pieces
In a separate bowl whisk together olive oil, lime juice and lime cilantro dressing
Toss dressing with veggies
Season with salt and pepper and toss one more time
Sprinkle Feta Cheese Crumbles on the top of your salad (optional)
Chill in the refrigerator for 30 minutes, then serve
